Corn Bread Taco Pie Recipe


Corn Bread Taco Pie

1 pound lean ground beef or turkey, browned, drained and seasoned with a packet of taco seasoning (1/2 packet is fine if you want to decrease salt intake)
1 cup self-rising corn meal mix
3/4 cup milk
1 egg
1/2 can creamed corn (no salt added)
1/2 can fat free refried beans
4 oz. low-fat shredded cheese of your choice

Once meat is cooked and you add the taco seasoning, preheat oven 375 degrees. Mix corn meal mix, milk, and egg. Stir until blended. Add creamed corn, mix until blended. Place 1/3 of corn meal mixture in the bottom of a 9 X 9 casserole dish. Add meat. Spread refried beans over meat. Sprinkle cheese. Pour rest of cornmeal mixture over top. Bake for 40 minutes. Serve with sour cream and salsa.

This recipe would be good with black beans instead of refried beans. You could add green chiles or jalapenos if you like spicier recipes.This recipe fits in a 9 X 13 pan if you double it.

About 6 servings.
